The Best Crockpot Chili Recipe by Nana

This is my Mom’s famous chili recipe (now known as Nana to our kiddos). Growing up I remember my mom making this chili recipe the day after Christmas every year when they would host a casual drop-by-and-say-hello-for-the-holidays type of party. Friends and family would pop over continually throughout the afternoon and into the evening and I always remember the hustle and bustle of people coming and going and the smell of the chili. Turns out this crockpot chili is super easy to make, packed with protein and veggies and a set and forget type of meal. My mom knew what she was doing. This crockpot chili is great to double for potlucks, a delicious cozy weeknight meal and easy to freeze leftovers.

What’s In The Best Crockpot Chili

  • Beef
  • Fresh Veggies: Onion, Bell Pepper, Carrot, Celery
  • Spices: Garlic, Chili powder, Cumin, Oregano, Salt, Peper
  • Canned Goods: Diced toms, black beans, corn, tomato paste
  • Finishing touches: Lime juice, cheese, sour cream

How to Make The Best Crockpot Chili

  • Brown the beef
  • While beef is browning, dice your veggies
  • Add to Crock Pot: Drain beef and add beef, veggies, canned toms and beans, and spices to crock pot
  • Stir it all up and put on the lid
  • Before you serve: add corn and tomato paste
  • When serving add a squeeze of lime juice and top with favorite toppings

Variations

  • Change up the beans… kidney etc
  • Change up the meat… ground turkey, ground other game
  • Swap cheese and sour cream for dairy free alternatives
  • Swap meat for another bean to make vegan & vegetarian friendly

What to Serve With The Best Crockpot Chili

  • Great on its own but if you are a side person..
    • Corn bread
    • Tortilla chips or corn chips
    • Cesar salad

Storage

Leftover chili will last up to four days in the fridge or three months in the freezer. Reheat it in the microwave until warm.

Supplies

Ingredients

  • 1 lb Ground Beef
  • 1 Onion
  • 1 Red Bell Pepper
  • 1 Carrot
  • 1 Celery
  • 2 Garlic Cloves
  • 2 Tbsp Chili Powder
  • 2 tsp Cumin
  • 2 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Pepper
  • 28 oz can Diced Tomatoes (or 2 x 14oz cans)
  • 15 oz can Black Beans
  • 15oz can Corn
  • 1/4 cup Tomato Paste

At the End

  • 2 Tbsp Lime Juice

Toppings

  • Jalapeno Peppers
  • Avocados
  • Shredded Cheese
  • Sour Cream
All ingredients added, ready to cook on low

Preparation Steps

  1. Brown beef in a pan and drain excess fat, add beef to crockpot
  2. Dice onion, red pepper, carrot, celery, garlic, add to crockpot
  3. Add spices to crock pot: chili powder, cumin, oregano, salt and pepper
  4. Add canned tomatoes and drained black beans to crock pot
  5. Stir to mix veggies, spices and beef
  6. Cover and cook on low for 6-8hrs
  7. Last 20 mins, turn to high, add tomato paste and corn
  8. Before serving add lime juice
  9. Scoop into bowls and top with cheese, sour cream and your other favorite toppings
